In 2016 a band of liquid pioneers from Cutwater Spirits teamed up with Robinson Brown Design to create one of the West Coast’s largest new distilleries: a 50,000 square-foot world-class production facility, with a spacious tasting room and kitchen where guests could enjoy innovative signature cocktails and regional cuisine worthy of those libations.
Robinson Brown Design conceptualized an innovative adaptive reuse plan, one that would turn an innocuous warehouse into a one-of-a-kind spirits destination. The design would combine sleek and breathtaking styling, upscale nautical decor, and an unmistakable commitment to distilling.
The vision was to create an immersive experience for guests, inside and out. As you approach the building its glass exterior is beveled, like the clear hull of a ship, with water features, nautical hardware, and dramatic maritime inspired lighting. A glass encased 40-foot-tall copper still at the entry creates an unforgettable icon of Cutwater’s distilling spirit.
Inside, the barrel vaulted ceiling opens up the spacious bar and restaurant, with powerful beams, open skylights, metal crossbars and glowing halo light fixtures. A modern galleon. The centerpiece of the room is a large handcrafted sepele and teak bar, with soaring glass and metal display shelves, a working bar that also highlights the vast array of Cutwater’s distilled spirits. A bank of nine synchronized video screens bring ambient Pacific Rim scenes into the space. Roll-up glass doors open the entire room to San Diego’s warm climate, and cocktail lounge areas inside and out have fireplaces and design touches to entice guests. Dramatic restrooms have lighting and wood craftsmanship worthy of an ultra yacht.
